🥑 Quick Recipe: Pasta with Avocado Cream and Vegetables


1. Cooking Pasta and Vegetables 🥕

  • Cook the legume pasta in boiling salted water according to the cooking times.

  • Meanwhile, steam vegetables (e.g., broccoli, carrots, green beans, courgettes) until tender but still crunchy.

  • Reserve a generous ladle of the pasta cooking water before draining.

2. Preparation of the Avocado Cream 🥣

  • In a blender, combine the pulp of a ripe avocado , the juice of half a lemon , a drizzle of extra virgin olive oil , a pinch of salt and pepper .

  • Blend until smooth. If it's too thick, add a little water (or cooking water) until you reach the desired consistency. You can also add basil or mint leaves for a touch of extra flavor.

3. Assembly and Stirring ✨

  • Drain the pasta and transfer it to a large bowl.

  • Add the avocado cream and mix well to coat the pasta evenly.

  • Add the steamed vegetables and stir gently to distribute them.

  • If necessary, add a little of the pasta cooking water to make the sauce creamier.
